Highlights from 2000 Journals:

The day finally came when we finished the farmhouse renovation and began our new life in the once falling down 100+ year old homestead. I was never so proud to stand in my doorway and look into our creation.

We also found the time to put in a few more gardens this year and have begun selling our organic salads and have really enjoyed some of the best vegetables we've ever tasted.

We did break away this winter a time or two for an adventure up in the mountains skiing and enjoying fresh North Carolina snow. And the butterflies came right on time again this year giving us some great moments sharing the experience with friends and their children.

We got the privilege of watching and learning from a pair of Phoebe birds that built their nest on our porch this spring. We watched them everyday and were in complete awe the morning their young babies finally flew away.

I've also made a couple mistakes this summer that have taught us a few valuable lessons. We have worked our way past the hardship and we have become a little wiser from it too.

We're having the bests times of our life now and are truly feeling happy and complete. While basking in the moments of today, we continue to have many visions of tomorrow. We have already filled a notebook full of more dreams, plans and farm projects. We are making preparations to preserve our farm permanently, and are continuing efforts to make our farm and ourselves more healthy, in harmony and self sustainable.
